Gluten free - Crepe

- 1/2 cup Any type of milk (almond, soy, hemp or regular milk)
- 2 Tbsp Coconut oil (melted), camelina oil or olive oil
- 2 Eggs
- 1 cup Otimo flour
- 1/8 tsp Salt
- 1 Tbsp Maple syrup
Mix all the liquid ingredients first (milk, oil, maple syrup), and then add eggs and salt, and mix well.
Add Otimo flour, and mix until well incorporate.
Heat a medium sized pan with 1 tsp of oil (ghee, coconut oil, camelina oil or any other preferred oil) over medium low heat. Spread a 1/3 cup of the mixture on the pan, and cook both side for about 5 minutes each.
Topping can be anything you like for crepe! Enjoy!!
Mio: I love the texture of this crepe :) My favorite toppings are sliced bananas, coconut chocolate sauce and maple syrup! I also attached some pictures of our breakfast with Otimo!
This recipe makes about 4 crepes.
